Whether you will be spending Valentine’s day with your significant other, best friends or on your own, everybody loves chocolate covered strawberries…so, why wait for someone else to (possibly) give them to you when you can just make them for yourself!? I wish that I could say that I only enjoy these on Valentine’s day, but that would be lying and I am not going to do that to you. The truth is, these are a regular in our house. They are TOO easy, and so delicious & in my mind– a healthy dessert (fruit,ha).
Hi guys and happy weekend! If you’re anything like me, you hate to waste anything. I am definitely a “may I please have a box for the 3 noodles left on my plate” kinda girl, #leftoversaremybff. Recently R and I invested in a juicer, and I have to tell you…I love absolutely everything about it, well, except for the cleaning (worth it though) and all of the pulp that finds its way to the trash. Apparently, I am not the only “juicer” out there who shares in this frustration because I stumbled upon some really great recipes that use the leftover pulp! Today I am going to share with you a healthy, hearty, left over pulp, muffin recipe! These are perfect and so easy to make. They’re the perfect, healthy and convenient snack to have on hand. They’re hearty enough to have for a midday snack, yet, delicious enough to warm up and have with morning coffee (hellloooo, saturday morning loveliness!). Keep in mind that your muffins will taste differently depending on the ingredients you used for your juice. In my case the pulp consisted of 3 grapefruits, 2 apples, 20 mini carrots, 1 inch of ginger, 4 cups of spinach and 2 cups of kale.

If you are anything like me mornings aren’t necessarily filled with a whole lot of time during the week & we all know that a lack of time (and planning) leads to us making decisions based upon convenience. For me, I try my absolute hardest to not allow what I nourish my body with to be a decision of convenience, but rather of thorough thought, because after all, my body really is the only place that I have to live. Having said that, I realized that the part of my day that was most affected by “convenience” was the morning– and I decided that I was going to change that. So, I bring to you- Homemade Vegan To Go Breakfast Bars, and might I mention, they are PACKED with protein so they are absolutely going to keep you satisfied until lunch.
Good Morning and Happy Saturday! I’m not sure about your part of the world- but, this morning in GA is absolutely perfect. If I didn’t know better, I wouldn’t think that Christmas was right around the corner- the sun is shining, not a cloud in the sky and the air has just a slight chill to it. I may be an old soul, but I think that the morning may be my favorite part of the day. I love waking up, brewing a cup of coffee and just taking in the day before it all begins. I know that research shows that eating breakfast is better for your metabolism and for your appetite over the course of the day, but for me- I just don’t know. Some mornings I wake up and I have no appetite at all- when this occurs, I usually blend up a quick Green Goddess smoothie or juice. Other mornings, I wake up and my appetite is raging- in this case, (thankful that I planned ahead) I will have a bowl of my Overnight Chia Seed Pudding. Life is crazy and a lot of the times it seems that mornings are hectic and we sacrifice breakfast/coffee/peace of mind for an additional 10 minutes of sleep. If that sounds like your life- I am here to help!
